Does your balcony need new life? Try potted herb plants! Using pots is helpful because you can simply change their place as you experiment with the quality and amount of sunshine they get. If you grow your balcony herbs in containers, they are portable—so you can bring them inside at the end of the season.

Balconies are all about light and you will want to go with herb plants like morning glories that grow well with a lot of sunshine. These little plants can tolerate the reflection from the windows and doors and also the heat that a metal balcony captures. Check out your balcony at different times of the day to see the quality of sunlight, the heat and the intensity. Check to see which way your balcony faces and whether it gets a lot of morning or afternoon sun.

A good rule of thumb for balcony plants would include any plant with a thick leaf or a velvety texture as well as any plant that is gray or silver. They will do well because they lose less water to evaporation.

Here are some herb plants that I recommend for your balcony:

  • Aloe vera: Adding an aloe vera herb to your balcony will be easy. It does not require much water and it tolerates a lot of sun and heat. You can use aloe vera easily by snipping off the tip and rubbing it on a burn or other skin problem. It will cool the place, but it will be sticky!
  • Cayenne pepper: With cayenne pepper on your balcony, you can always add a little spice to your dinner next time you grill out. This herb should do quite well on your balcony and add some color too.
  • Cucumber: A trailing vine, like the cucumber, will provide an added touch to your balcony. Cucumbers are fabulous for facials, ladies. You can also grab some cucumbers to slice for your salads, straight from the balcony!
  • Hens-and-chicks: These are among my very favorite plants. These don’t need a lot of watering—they are water-holding succulents—and will tolerate the hot temperature and bright light that you might have on your balcony. They are cute to look at too!
  • Lavender: Just one whiff of the soothing smell of this fragrant plant and you will be more at ease. The brilliant purple buds will make a colorful balcony even better.

Select a collection of interesting containers for your balcony or try a hanging basket lined with a coconut husk for good results. I once made my own balcony basket with chicken wire and moss. I had never tried anything like that before. That basket wasn’t the best thing since sliced bread, but it worked for me. The key is to choose a pot or basket that can allow for good drainage.

Growing Herbs: Pots

It’s simple to grow one herb in a pot. You can stretch your imagination and try several herbs in the same pot. It looks nicer and adds a little texture to my garden.

If you want to try this, you would choose herb plants that have similar earth and watering needs and then buy those that will look good together or have similar uses—like planting all your cooking herb plants together.

These are a few herbs that I’ve worked with that will do well in containers:

  • Sage: With nearly 750 varieties, hopefully you find at least 1 sage plant for your garden that you will like, because it comes in a variety of colors and sizes. Sage does well from seeds, which can give you a head start on the growing season if you start early indoors. It prefers well-drained sod and lots of direct sunshine. This is one of those that I plant for the leaves, so I clip off the flowers as soon as they bud to help the herb focus on the foliage, which I then cut off at the stem whenever I’m cooking.
  • Scented geraniums: I enjoy the bright, vibrant colors and scents of the scented geranium. I hope you enjoy scented geraniums as much as I do. Although they look very similar to floral (non-herbal) variety, these also grow well in pots that you can pick up at any nursery, home improvement or discount store. Put your herbs in a pot that has nice drainage and put it in a spot that will give your scented geranium a lot of sun. You can harvest the stems and leaves for cakes and teas. The petals are lovely in pressings.
  • Cardamom: Cardamom is a great plant for you if bad breath is an issue for you. This is one of the larger herbs you can grow in a pot; just keep in mind that you will need to bring your plant in for the winter months. Not only will the seeds add a taste of India to your rice and chicken meals, you can also add it to soups and stews. In addition to taking care of your bad breath, cardamom can assist with your flatulence (not that you have flatulence) or least make your clothes smell nice.
  • Lemon verbena: This is one of those indispensable herb plants to have in your herb garden because you can use it in so many ways. Don’t even think about starting with seeds. Go out and buy a young herb and get it going in a wide pot that will support the plant’s height. Lemon verbena can take the full sun and does well if the earth has good drainage. Watch your leaves for signs of drought because the foliage is the best part of the plant.

There are plenty of other herb plants that you can use in your container herb garden, including thyme, mints, lavender, goldenrod, fennel and carrot.

Frozen Herbs for Winter Dishes

Do you love cooking with fresh herb plants? Not only do they taste great, they smell lovely too! It is simple to use fresh herb plants too. You can always clip off what you need and mix in with the rest of your ingredients for a fresh flavor you’ll love.

How do you manage in the middle of winter when there aren’t fresh herb plants around?

Freezing is much better for an plant than drying and it’s much simpler. In three steps you can store them for future dishes—cultivate your herbs, harvest your herbs and freeze your herbs. It is not necessary to dice your herbs before you freeze your herbs. If they are not packed too tightly, you can crumble the frozen herb plants in your hands before you open the freezer bag.

Some folks chop their herb plants and freeze them in ice cube trays. Just fill each compartment of the ice cube tray almost to the top with chopped chives or whatever other herb you want to freeze and add water. Put these cubes into the freezer bags and later, when you are ready mix a few cubes into your soups, stews and other dishes.

If you want to experiment with freezing herb plants, these are some great ones to start with:

  • Basil: Remove the foliage from the stem just before the buds of your basil when you are ready to harvest them and dry your herbs. Put the dried leaves into a plastic container so that you can use them in the future. If you do not have much time, just take the leaves and put them into a freezer bag and stick them in your freezer to keep them fresh. Another way to preserve your basil is to layer your herbs in the bottom of a plastic container and cover your herbs with extra virgin olive oil, which will both keep and bring out the flavor. You can keep your herbs like this for several months.
  • Parsley: It isn’t just a pretty garnish; you can use parsley in any Italian dish.  [Parsley|It] will work well in almost any Italian [meal|dish]. Nobody appreciates parsley for it’s positive attributes. It cannot help it if the other Italian herbs (like oregano, basil and garlic) have stronger, more memorable flavors.  What it does have is the ability to strengthen the tastes of other herbs. Mix it into any dish (usually near the end of the cooking process) and it will make the rest of the herb plants that much nicer. I generally take the leaves and put them into a freezer bag, put the bags on the shelf of my freezer and then put a box of vegetables on top of my bagsto freeze them flat. When you’re ready to use them, just crunch the bag up in your hand and they’re instantly diced.
  • French Tarragon: If you plan to over-winter your French tarragon plant, be sure not to clip it back too much. Of course it’s better to use the foliage fresh, but you can tuck some of these leaves into a freezer bag and they will get you through the winter. Spice up your chicken or fish meals with this herb. French Tarragon is good for making vinegars, cream sauces and mustards.

Once you put the herbs in the freezer bag, write the name of the plant on the outside of the bag and the date so that you will be able to tell similar herbs apart.

Growing Cilantro

The first time I tasted cilantro was an unforgettable experience. I was in Boston and I went to an amazing taqueria, the kind where they build everything before your eyes out of amazingly fresh ingredients. When they asked if I wanted some on my burrito, I had to taste it first. I loved it. Next I tried my hand at my first cilantro pesto and I was forever hooked.

The cilantro plant often reaches heights of up to three feet and has become very popular lately in Tex-Mex cooking. If you take a quick glance at cilantro you might belive that it’s parsley, but its sweet and musky flavor can verify it’s certainly unlike any parsley I know of. Cilantro is the name of the foliage, which has awesome pale pink blossoms, but the plant that comes from the seeds is called as coriander.

You can begin your cilantro plant from seeds or buy it from a local nursery, greenhouse or home improvement store. Because it’s an annual, you will be starting fresh with new herbs each year. I love to germinate my seeds in late winter and line the pots up on my kitchen windowsill so I don’t miss the little sprouts that will show up in 7 to 10 days.

Once the weather turns sunny, I move my cilantro herbs to a raised bed in my garden, because they thrive on moist, rich sod and full sun. If you live in a hot climate, be sure to provide some shade for your cilantro. Keep in mind that if your cilantro gets too much sun or too much heat it will turn bitter.

About nine weeks or so after you plant your cilantro, you will have plants with pretty lavender, white or pale pink blossoms. If you want to skip growing in pots, just wait until it gets warmer and plant the seeds outdoors. After you plant your seeds the clear skies and nice weather along with a little rain will turn your seeds into sprouts in less than two weeks.

For the strongest flavors, try your fresh cilantro in your summer dinners. You can snip off a couple of leaves and either add them whole or dice them and toss in your favorite Mexican dish.

Remember to dry some cilantro for your fall, winter and spring dinners. Try to snip off the leaves just before the herb blossoms so that the foliage will have a heavy concentration of oils. You will get good outcomes if you dry this plant on a drying rack. When you dry the herb the flavor is not as strong, so remember to use more dried cilantro than you would fresh.

You can cure the coriander seed by drying them first—hanging them upside down in a paper bag works the best. Once the seeds have dried, you can release them from their pod by rolling them between your hands. Then freeze it for a minimum of 48 hours before storing it in a cool, dark place.

As one of the curry spices, you can use the crushed coriander seeds as a powder in baking, stews, soups and casseroles.

Easy to Grow Herbs

When it goes right, you just can’t beat it! If you grow herbs in your garden, you’ll have that kind of success. What you need to do is create a spot for your herb to thrive, focusing on water, sunlight and earth condition.

Here are a few of my favorite low-maintenance herb plants for your garden:

  • Borage: Boil the leaves to reduce the chewy texture, because without this, the long, fuzzy and prickly leaves are not easily edible. The borage plant appreciates dry, dark soil and full sun—the blue or purple star-patterned petals are sweet as can be. You can begin with seeds in mid-to-late spring and by mid-summer you’ll have all the borage you can handle.
  • Caraway: The leaves of this biennial are similar to the foliage of a carrot during the first year. In its second season, it will have lovely pink or white umbrella-shaped flower clusters on 1 to 3 feet tall stems. Caraway will take full sun if you plant it in well-drained soil. Sow the seeds outdoors in spring or fall. Since caraway is a self-seeder, you can let the dead blooms fall to the earth and you won’t have to reseed it for the next growing cycle.
  • Dill: This quick-growing herb with fine, fern-like foliage likes well-drained sod and full sun. Do not let your plant get more than three feet tall before you start using it in your recipes; you can start harvesting once the plant reaches a foot. Dill is great for bouquets because of its pretty, yellow umbrella-like heads, which can also be used as a seasoning. These will grow great from seed and because this plant grow quickly you won’t want to start the germination process in advance.
  • Fennel: The mature version of fennel looks a lot like dill, but its licorice taste is nothing like dill. If you plant your seeds in early summer, you’ll have a full-grown, 4-foot-tall plant in only a few short weeks. Plant them in full sun in well-drained soil for the best results. The seeds are the best part. You will want to collect them before they go fully brown. Did you know that you can use your dried stems in all kinds of kitchen creations, including soups, stews and breads?
  • Lemon Balm: If you like the sweet, lemony scent of lemon balm, you will be happy to know that this perennial enjoys light, shady, well-drained soil. I like its heart-shaped leaves. Seeds take too long, instead start with a greenhouse-bought lemon balm and plant it in a pot or in your flower bed. You’ll soon be able to divide your lemon balm and replant it. Don’t feel like you have to plant the new division next to the first one, because lemon balm will spread through self-sowing. Snip off the dead flowers to prevent lemon balm from sowing itself.
  • Sweet Cicely: Here is a perennial herb that loves light shade, so give it that and loose, rich soil and it will take off from there. Add in organic compost and mulch to help in sweet cicely’s growth. Buy your first couple of herbs and it will spread out from there through self-sowing.

These aren’t the only good ones either … there are plenty more to choose from, including Queen Anne’s lace and dandelion.
